Ingredients for gujiya dough
Urad Dal: 1/2 cup
Rice flour: 1/2cup
Baking Soda: 1/2tsp

Coconut milk powder: 1/2 cup
Coconut milk: 1/4 cup
Watermelon seeds: 2 tbsp.
Poppy seeds: 2 tbsp.

Cardamom powder: 1 tbsp.

Jaggery powder: 3 tbsp.
Water: 2 tbsp.

* Put urad dal, rice flour, baking soda, salt, olive oil and boiling water in a bowl.
* Mix everything and stir with a spoon. Cover the mixture with a lid and set aside for 20 minutes.

* Dry melon seeds and poppy seeds in a pan for 4-5 minutes. Remove the seed mixture and let it cool.

Baked Gujiya Recipe
1. Knead the rested dough for 3-4 minutes until well combined. Add warm water and olive oil if needed to make a nice, firm dough that isn’t too soft or hard.
2. Now take a lemon-sized ball.
3. Roll out the dough using rice flour.
4. Add the poori to the gujiya maker and add about 2 teaspoons of the Mawa mixture. Make the gujiyas in a similar manner.
5. When all the Kujiyas are ready Place the kujiya in a greased baking pan and bake in the preheated oven for 15 minutes at 180°C or until desired color is achieved.
6. Don’t bake too long because it will be too crispy.
7. Bake until the outer layer is soft but cooked.
8. Now in a saucepan add the jaggery powder and water in the saucepan, simmer the liquid for 4-5 minutes or until slightly thickened.
9. When jaggery caramel is ready. Brush on the gujiya and sprinkle some pistachio powder on the corner of the gujiya for decoration!
